Peel the potatoes (optional) and cut them into thin strips.

Rinse the potato strips in cold water to remove excess starch.

Dry them well with a kitchen towel.

Heat oil in a deep pan or fryer (about 170–180 °C / 340–355 °F).

Fry the potatoes in small batches until golden and crispy (about 4–6 minutes).
