Crispy Vegan Fish Fingers with Avocado Dip

Ingredients

For the Roasted Broccoli

  • 1 head broccoli, cut into medium florets

  • 1 tbsp olive oil for greasing

  • 2 tbsp olive oil for seasoning

  • 1/2 tsp dried oregano

  • 1/4 tsp paprika

  • Salt and black pepper to taste

  • 2–3 tbsp breadcrumbs

For the Plant-Based Fish Fingers

For the Creamy Avocado Dip

  • 1–2 ripe avocados

  • 1 tbsp lime or lemon juice

  • Salt and pepper to taste

  • Optional: 1–2 blanched broccoli florets or a handful of spinach

For Garnish

  • Sesame seeds

Method

Step 1: Prepare the Broccoli

Preheat your oven to 200°C. Bring a pot of salted water to a boil and blanch the broccoli florets for 2–3 minutes until slightly tender. Drain thoroughly and pat dry.

Step 2: Arrange and Flatten

Lightly grease a baking dish with olive oil and arrange the broccoli florets in a single layer. Using the bottom of a glass or cup, gently flatten each floret to create more surface area for crisping.

Step 3: Season the Broccoli

Mix olive oil, oregano, paprika, salt, and pepper in a small bowl. Brush the mixture over the broccoli and sprinkle evenly with breadcrumbs.

Step 4: Roast Until Crispy

Bake the broccoli for 15–20 minutes until golden brown around the edges and beautifully crisp.

Step 5: Bake the Plant-Based Fish Fingers
