Ingredients
For the Sushi Sandwich
- 1 sheet nori (seaweed)
- 1 cup cooked sushi rice, seasoned with rice vinegar, sugar, and salt

- 2 tbsp vegan cream cheese or vegan mayonnaise
- 3–4 slices vegan salmon (such as Wanted Vegan plant-based sashimi)
- ½ avocado, sliced
- 1–2 tbsp spicy sauce (sriracha mayo or a mixture of sriracha and vegan mayo)
- Soy sauce, for serving
For the Batter & Coating
- ½ cup all-purpose flour
- ¼–½ cup cold water
- ½ cup panko breadcrumbs (or regular breadcrumbs)
- Cooking oil, for deep frying (vegetable, canola, or peanut oil)
Method
1. Prepare the Sushi Base
Lay a large sheet of plastic wrap on a clean work surface and place the nori sheet on top.
Add the seasoned sushi rice to the center of the nori and gently spread it into a thick, compact circle.
2. Add the Fillings
Layer the cucumber slices over the rice, followed by the vegan cream cheese or mayonnaise.
Arrange the vegan salmon slices on top, then add the avocado. Finish with a generous drizzle of spicy sauce.
3. Fold and Shape
Fold one side of the nori over the filling toward the center, then fold the opposite side over to completely enclose the ingredients.
