Vegan Sushi Sandwich

Take your sushi game to the next level with this crispy plant-based sushi sandwich. Filled with creamy avocado, fresh cucumber, plant-based salmon, and a spicy sauce, then coated in crunchy panko breadcrumbs and deep-fried until golden, this indulgent fusion recipe delivers the perfect balance of crunch, creaminess, and umami in every bite.

Ingredients

For the Sushi Sandwich

  • 1 sheet nori (seaweed)
  • 1 cup cooked sushi rice, seasoned with rice vinegar, sugar, and salt
  • ¼ cucumber, thinly sliced
  • 2 tbsp vegan cream cheese or vegan mayonnaise
  • 3–4 slices vegan salmon (such as Wanted Vegan plant-based sashimi)
  • ½ avocado, sliced
  • 1–2 tbsp spicy sauce (sriracha mayo or a mixture of sriracha and vegan mayo)
  • Soy sauce, for serving

For the Batter & Coating

  • ½ cup all-purpose flour
  • ¼–½ cup cold water
  • ½ cup panko breadcrumbs (or regular breadcrumbs)
  • Cooking oil, for deep frying (vegetable, canola, or peanut oil)

Method

1. Prepare the Sushi Base

Lay a large sheet of plastic wrap on a clean work surface and place the nori sheet on top.

Add the seasoned sushi rice to the center of the nori and gently spread it into a thick, compact circle.

2. Add the Fillings

Layer the cucumber slices over the rice, followed by the vegan cream cheese or mayonnaise.

Arrange the vegan salmon slices on top, then add the avocado. Finish with a generous drizzle of spicy sauce.

3. Fold and Shape

Fold one side of the nori over the filling toward the center, then fold the opposite side over to completely enclose the ingredients.

Using the plastic wrap, tightly compress the sandwich into a firm round or square patty. The tighter the shape, the better it will hold together during frying.

Refrigerate for 15–20 minutes.

4. Prepare the Coating

In a small bowl, whisk together the flour and cold water until smooth, creating a thin batter similar to pancake batter.

Spread the breadcrumbs onto a plate.

5. Batter and Crumb

Dip the sushi patty into the batter, ensuring it is evenly coated. Allow any excess batter to drip off.

Transfer to the breadcrumbs and gently press to coat all sides thoroughly.

6. Deep Fry Until Golden

Heat 2–3 inches of oil in a deep pot or pan to 175–180°C (350–360°F).

Carefully lower the breaded sushi sandwich into the hot oil and fry for 5–7 minutes, turning occasionally, until golden brown and crispy on all sides.

Remove with a slotted spoon and place on a wire rack or paper towel-lined plate to drain excess oil.

7. Serve

Allow the sandwich to cool slightly before slicing it in half with a sharp knife.

Serve immediately with soy sauce for dipping and enjoy the beautiful layers of rice, avocado, vegan salmon, and spicy sauce inside.
